Bacon Wrapped Mini Meatloaves
These bacon wrapped mini meatloaves are everything you love about classic meatloaf, just scaled down and wrapped in crispy bacon. Ingredients
- 1 tablespoon butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 1/2 pounds ground beef
- 1 large egg
- 1 cup bread crumbs
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 12 slices bacon
- 1/2 cup ketchup
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1/2 cup fried onion
Instructions
Preheat oven to 350°F. Line a baking sheet with aluminum foil.
In a medium pan, melt the butter. Add the onion and cook until softened, about 3-5 minutes. Add the garlic. Cook until fragrant, about 30 seconds. Remove from heat.
In a large mixing bowl, combine the ground beef, egg, bread crumbs, milk, Worcestershire sauce, and thyme.
Divide into 12 equal portions and shape into pucks. Wrap each puck with a slice of bacon, with the ends slightly overlapped.
In a small bowl, mix the ketchup, brown sugar, and mustard. Spread the ketchup mixture evenly over each mini meatloaf. Top with fried onions.
Bake for 45 minutes or until bacon is golden, and meatloaves reach 165°F.
