Pho Poutine

If you know me, you know my love for all things potato, with poutine being close, if not at, the very top of the list. Add phở, a staple of Vietnamese cuisine, into the mix and you’ve got the best of both worlds. This was such a fun appetizer to put together - I went through sharing several versions of this phở poutine with friends and tweaking the recipe over the course of multiple dinner parties so I’m really excited about it and hope you guys enjoy it!

Kimchi Egg Drop Miso Soup

Kimchi egg drop miso soup is a flavorful and comforting soup that combines the umami-rich flavor of miso with the tanginess of kimchi and the silky texture of beaten eggs. The eggs are added toward the end to create thin ribbons of egg throughout the soup. The result is a simple yet satisfying meal that’s both hearty and light.

Vietnamese Chicken Salad (Gổi Gà)

One of my favorite dishes growing up was this Vietnamese chicken salad (gổi gà). My mom would serve this either alone or with rice porridge drizzled with ginger fish sauce (mắm gừng). It’s light, tangy, slightly sweet, and full of yummy herbs like Vietnamese coriander and fried shallots. For an added crunch, you can add some shredded cabbage, but it’s totally optional!
