Traditionally, it's made with shrimp for added flavor, but my mom is vegetarian, so this is our family's version. Pho Poutine

If you know me, you know my love for all things potato, with poutine being close, if not at, the very top of the list. Add phở, a staple of Vietnamese cuisine, into the mix and you’ve got the best of both worlds. This was such a fun appetizer to put together - I went through sharing several versions of this phở poutine with friends and tweaking the recipe over the course of multiple dinner parties so I’m really excited about it and hope you guys enjoy it!
