Spicy Peanut Dumpling Ramen

Who knew adding a dollop of peanut butter to your broth could be so addictive? This spicy peanut dumpling ramen is savory, nutty, and just so, so good. You have to try it!

PREP TIME: 5 MINS COOK TIME: 15 MINS TOTAL TIME: 20 MINS

Ingredients

  • 4 servings ramen
  • 12 frozen dumplings
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch ginger, minced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/2 pound ground pork
  • 2 tablespoons crunchy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 5 cups chicken broth
  • 1 lime, cut into 4 wedges
  • Scallions, to garnish

Instructions

  1. Cook ramen and dumplings according to package directions.

  2. In a medium pot, heat the oil. Add garlic, ginger, cayenne pepper, paprika. Stir fry until fragrant, about 1 minute.

  3. Add pork. Cook until almost done.

  4. Add peanut butter, soy sauce, vinegar. Mix well until smooth and bubbling.

  5. Add chicken broth. Simmer for 2-3 minutes.

  6. Divide noodles, dumplings, and broth into bowls. Garnish with scallions, spritz with lime juice, and enjoy!
