Kimchi Egg Drop Miso Soup

Ingredients
- 3 cups chicken broth
- 1 1/2 tablespoons white miso
- 1/2 teaspoon sesame oil
- A pinch of white pepper
- 1 thin slice ginger
- 2 tablespoons cornstarch
- 2 eggs
- 1/2 cup kimchi
- Salt, to taste
- Pepper, to taste
- 1 scallion, sliced
Instructions
In a small pot, combine the broth, miso, sesame oil, pepper, and ginger. Bring to a simmer, being careful not to let the soup boil.
In a small bowl, make the cornstarch slurry by mixing the cornstarch with 2 tablespoons water. Slowly add the slurry to the pot while stirring the soup.
Continue stirring while adding the eggs.
Add in the kimchi. Add salt and pepper, to taste. Garnish with scallions. Enjoy!
