Ingredients
- 2 pounds chicken thighs
For the marinade:
- 1/2 cup olive oil
- 1/2 cup chicken broth
- 1 large lemon, juiced
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1/2 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions
In a small bowl, whisk together all marinade ingredients.
Place chicken thighs and marinade to a large resealable bag or large bowl. Toss to coat. Marinate for at least 30 minutes, or overnight in the fridge for deeper flavor.
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
Arrange chicken thighs on the prepared sheet and bake for 25–30 minutes, or until the internal temperature reaches 165°F.
