Juicy baked chicken thighs marinated in olive oil, lemon, garlic, and herbs for a bright, zesty flavor with a touch of heat. Perfectly roasted until golden and tender, this dish is simple, flavorful, and sure to be a crowd-pleaser.

Ingredients

  • 2 pounds chicken thighs

For the marinade:

  • 1/2 cup olive oil
  • 1/2 cup chicken broth
  • 1 large lemon, juiced
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1/2 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a small bowl, whisk together all marinade ingredients.

  2. Place chicken thighs and marinade to a large resealable bag or large bowl. Toss to coat. Marinate for at least 30 minutes, or overnight in the fridge for deeper flavor.

  3. Preheat the oven to 425°F. Line a baking sheet with parchment paper.

  4. Arrange chicken thighs on the prepared sheet and bake for 25–30 minutes, or until the internal temperature reaches 165°F.
