Spicy Miso Ramen

Spicy miso ramen anyone? This spicy miso ramen features a silky-smooth broth that’s umami-rich with a mild kick from chili bean paste for some extra oomph.

PREP TIME: 5 MINS COOK TIME: 15 MINS TOTAL TIME: 20 MINS

Ingredients

  • 2 servings ramen
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 2 teaspoons grated ginger
  • 1/4 pound ground pork
  • 3 tablespoons red miso
  • 2 teaspoons chili bean paste (doubanjiang)
  • 2 cups bone broth
  • 2 scallions, sliced
  • 2 boiled eggs

Instructions

  1. Cook noodles according to package directions. Divide into 2 bowls.

  2. In a medium pot, heat the sesame oil. Add garlic, shallot, ginger and fry until fragrant.

  3. Add pork. Cook until no longer pink.

  4. Add miso and bean paste. Stir fry for about two minutes.

  5. Add bone broth and scallions. Bring to a boil. Pour over noodles, add eggs, and enjoy!
