It’s time to up your breakfast game with these Caprese fried eggs. This delightful twist combines the richness of fried eggs with the fresh and vibrant flavors of a Caprese salad - ripe tomatoes, savory mozzarella, aromatic basil, and a drizzle of balsamic glaze. Not only is this quick to make and bursting with flavor, with the protein punch from the eggs, you’ll stay satisfied until your next meal. Plus, the tomatoes and basil provide a pinch of vitamins and antioxidants. Definitely a great way to kickstart the day!

Ingredients

  • 1/2 cup shredded mozzarella
  • 4 eggs
  • 1/2 pint cherry tomatoes, halved
  • Fresh basil, to garnish
  • Balsamic glaze
  • Freshly ground black pepper

Instructions

  1. Heat a medium pan over medium heat. Add a layer of mozzarella. Drop in eggs and tomatoes. Lower heat, cover, and cook until desired consistency.

  2. Top with basil, balsamic glaze, and pepper.

  3. Enjoy!
