Caprese Fried Eggs

Ingredients

  • 1/2 cup shredded mozzarella
  • 4 eggs
  • 1/2 pint cherry tomatoes, halved
  • Fresh basil, to garnish
  • Balsamic glaze
  • Freshly ground black pepper

Instructions

  1. Heat a medium pan over medium heat. Add a layer of mozzarella. Drop in eggs and tomatoes. Lower heat, cover, and cook until desired consistency.

  2. Top with basil, balsamic glaze, and pepper.
