Caramelized Pork and Eggs (Thịt Kho)
Here's a classic Lunar New Year dish that can be enjoyed throughout the year - thịt kho, or caramelized pork and eggs.

Ingredients
- 8 eggs
- 2 pounds pork shoulder, sliced and cut into 1 inch pieces
- 2 shallots, finely diced
- 2 cloves garlic, minced
- 3 tablespoons fish sauce
- 3 tablespoons soy sauce
- 2 star anise
- 1/2 teaspoon ground black pepper
- 1/3 cup sugar
- 2 cups coconut juice
- 2 scallions, sliced
- 4 servings rice
Instructions
In a large bowl, combine the pork, shallot, garlic, fish sauce, soy sauce, star anise, and black pepper. Set aside to marinate.
In a medium pot, add the eggs and cover with water. Bring to a boil. Once boiling, remove from heat and let sit for 8 minutes. Peel and set aside.
In a large pot, heat the sugar over medium-low heat, stirring occasionally, until caramelized, about 5 minutes. The sugar will melt and become almost like a syrup. Sugar burns quickly, so watch it carefully. Once the melted sugar turns golden brown, add the pork and increase to medium-high heat. Stir to coat and brown the meat.
Once the meat is browned on all sides, let simmer until the sauce is reduced, about 5 minutes.
Add coconut juice and let simmer for 15 minutes, stirring occasionally.
Add the eggs and let simmer for 30 minutes, stirring occasionally.
Serve over rice and garnish with scallions.
