When it comes to weeknight dinners, casseroles are king. This easy chicken casserole transforms regular chicken and rice into a creamy and savory entree for the whole table. Just add the ingredients to a baking pan, toss it in the oven, and enjoy your tasty, baked chicken casserole!

PREP TIME: 5 MINS COOK TIME: 1 HRS, 15 MINS TOTAL TIME: 1 HRS, 20 MINS

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt, to taste

  • Pepper, to taste

  • 1 cup uncooked rice

  • 1 package onion soup mix

  • 10 ounce can condensed cream of mushroom soup

  • 1 and 1/2 cup water

Instructions

  1. Preheat oven to 375 °F.

  2. Spray a 9x13 baking pan with cooking spray.

  3. Season chicken with salt and pepper. Add to pan.

  4. Pour uncooked rice over chicken.

  5. Sprinkle onion soup mix over rice.

  6. Combine mushroom soup with water. Pour over chicken.

  7. Cover with aluminum foil and bake for 1 hour and 15 minutes, or until rice is tender.
