Peanut Butter Tofu
In this peanut butter tofu recipe, crispy baked tofu is tossed in a delightfully rich and flavorful peanut sauce to make a delicious protein-packed vegetarian dish.

Ingredients
14 ounce block extra-firm tofu
2 tablespoons soy sauce
1 tablespoon cornstarch
For the sauce
1/2 cup chunky peanut butter
1 cup coconut milk
2 tablespoons soy sauce
2 tablespoons honey
1/2 teaspoon ground ginger
2 garlic cloves, minced
Cilantro, to garnish, optional
Instructions
Wrap the tofu in several layers of paper towels for 30 minutes to 1 hour to remove excess moisture.
Preheat the oven to 400° F.
Slice the tofu into 1-inch cubes.
In a medium bowl, gently combine the cubed tofu, soy sauce, and cornstarch.
Line a baking pan with parchment paper and place the tofu cubes evenly on the pan. Bake for 25 minutes, or until crispy and lightly browned.
In a medium pan over medium heat, combine the sauce ingredients and stir until smooth, about 5 to 10 minutes.
When the tofu is done baking, add the tofu to the saucepan. Stir to combine.
Garnish with cilantro. Serve over rice or as a side.
