Roast Garlic Sesame Mashed Potatoes

Ingredients
- 8 cloves garlic
- 1 1/2 pounds baby potatoes
- 2 tablespoons butter
- 1/2 tablespoon sesame oil
- 1/4 cup whole milk
- Salt, to taste
- 1 scallion, sliced
- 1/2 teaspoon toasted sesame seeds
Instructions
Preheat oven to 375°F.
Place garlic on a piece of aluminum foil, drizzle with olive oil, and wrap tightly. Roast on baking sheet for 30 minutes, until cloves are golden and soft.
Halve the potatoes and place them in a medium pot. Cover with water, season generously with salt, and bring to a boil. Cook for 15 minutes, or until fork tender.
Drain potatoes and return to pot.
Add the butter, sesame oil, milk, and roast garlic to the pot.
Mash until smooth or to your desired consistency.
Adjust salt to taste.
Transfer to a serving bowl.
Garnish with scallions and sesame seeds.
