Slow Cooker Pineapple Chicken
Slow cooker pineapple chicken is easy to make, healthier than take out, and perfect for a light summer meal. The chicken in this recipe cooks all day in a delectable pineapple sauce, soaking up the sweet, tangy, and savory flavors for a minimal effort, mess-free meal! I use chicken thighs in my recipe to keep things nice and juicy but feel free to use any cut of chicken you'd prefer.

Ingredients
1 20-ounce can pineapple chunks
1/4 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon grated ginger
6 skinless, boneless chicken thighs
1 and 1/2 tablespoons cornstarch
2 scallions, sliced
Instructions
Separate the pineapple juice from the pineapple chunks. Set pineapple chunks aside, or refrigerate, to be added later. You should have about 3/4 cup of pineapple juice. Add water if necessary to bring it up to 3/4 cup.
In a small bowl, combine pineapple juice, soy sauce, sugar, garlic, and ginger.
Add chicken to slow cooker. Pour sauce over chicken.
Cook on LOW for 8 hours, or HIGH for 4 hours, flipping the chicken halfway through cooking.
Once done, lift the chicken out of the slow cooker. Be careful as the chicken will be very tender. Set aside.
In a small bowl, combine cornstarch with 2 tablespoons of water. Stir into the sauce in the slow cooker and let simmer on high until thickened, about 5 minutes.
Add pineapple chunks. Stir to combine.
Add chicken and coat with sauce.
Garnish with scallions. Serve immediately.
