This baked pesto caprese chicken recipe is an easy and healthy meal and is such a fun twist on the classic caprese salad! The combination of tomato, basil, and pesto is tried and true in salad form, and as we've found, it translates well when used with chicken as a main dish!

SERVES: 4
PREP TIME: 10 MINS COOK TIME: 30 MINS TOTAL TIME: 40 MINS

Ingredients

  • 2 boneless, skinless chicken breasts, sliced crosswise

  • Salt and pepper, to taste

  • 1 cup pesto

  • 2 tomatoes, sliced

  • 4 ounce fresh mozzarella ball, cut into 4 slices

  • 1/4 cup basil leaves, chiffonade

Instructions

  1. Preheat the oven to 375° F.

  2. Line a baking pan with aluminum foil and place the chicken on the foil. Season with salt and pepper, to taste.

  3. Top the chicken with pesto, tomatoes and mozzarella.

  4. Place into the oven and bake until the chicken is completely cooked through, about 25-30 minutes.

  5. Garnish with basil, if desired, and serve.

Notes

  • Drizzle with balsamic vinegar, if desired.
