Butternut Squash Soup
This delicious butternut squash soup is silky, slightly sweet, and rich in butternutty flavor. It's so easy to make that it will become your new favorite recipe! All you need are an onion, butternut squash, potatoes, celery, and a carrot.

Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 1 medium butternut squash, cubed
- 2 medium potatoes, cubed
- 1 stalk celery, diced
- 1 medium carrot, diced
- 4 cups chicken broth or vegetable stock
- Salt, to taste
- Pepper, to taste
Instructions
In a large pot, melt the butter. Add onion, squash, potatoes, celery, and carrot, and cook until lightly browned, about 5 minutes.
Add enough broth to cover the vegetables and bring to a boil.
Once boiling, reduce heat and let simmer for 40 minutes, or until vegetables are tender.
Using an immersion blender, blend until smooth. Add more broth or stock if needed to obtain the desired consistency.
Add salt and pepper, to taste.
