Cheesy Baked Chicken and Potatoes

This mouthwatering cheesy baked chicken and potato dish uses a few simple ingredients, but really delivers on flavor. Potatoes take longer to cook than chicken, so in this recipe I give the potatoes a head start and add the chicken halfway.

PREP TIME: 5 minutes COOK TIME: 1 hour TOTAL TIME: 1 hour, 5 minutes

Ingredients

  • 3/4 pounds baby yellow potatoes, diced
  • Avocado oil, or any light baking oil
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • 2 chicken breasts, diced
  • Shredded cheddar cheese
  • Green onion, thinly sliced

Instructions

  1. Preheat oven to 400°F.

  2. In a 9x13 baking dish, add the potatoes and 1 tablespoon oil. Season with salt and pepper to taste. Sprinkle generously with garlic powder and paprika. Mix well with a spoon.

  3. Bake for 30 minutes.

  4. Remove from oven. Add the chicken and 1 tablespoon oil. Season with salt and pepper to taste. Sprinkle generously with garlic powder and paprika. Mix well with a spoon.

  5. Bake for an additional 30 minutes.

  6. Remove from oven. Top with shredded cheese and green onion.

  7. Bake for 3-5 minutes, until cheese is melted.
