Cheesy Baked Chicken and Potatoes
This mouthwatering cheesy baked chicken and potato dish uses a few simple ingredients, but really delivers on flavor. Potatoes take longer to cook than chicken, so in this recipe I give the potatoes a head start and add the chicken halfway.

Ingredients
- 3/4 pounds baby yellow potatoes, diced
- Avocado oil, or any light baking oil
- Salt
- Pepper
- Garlic powder
- Paprika
- 2 chicken breasts, diced
- Shredded cheddar cheese
- Green onion, thinly sliced
Instructions
Preheat oven to 400°F.
In a 9x13 baking dish, add the potatoes and 1 tablespoon oil. Season with salt and pepper to taste. Sprinkle generously with garlic powder and paprika. Mix well with a spoon.
Bake for 30 minutes.
Remove from oven. Add the chicken and 1 tablespoon oil. Season with salt and pepper to taste. Sprinkle generously with garlic powder and paprika. Mix well with a spoon.
Bake for an additional 30 minutes.
Remove from oven. Top with shredded cheese and green onion.
Bake for 3-5 minutes, until cheese is melted.
