There's really nothing more comforting than a steaming hot bowl of tomato soup. This delicious tomato soup is made with just a handful of ingredients, including canned tomatoes and simple spices. Creamy, rich and bursting with brightness, it's the ultimate sidekick to a grilled cheese sandwich for a fantastic comfort food meal.

PREP TIME: 5 MINS COOK TIME: 25 MINS TOTAL TIME: 30 MINS

Ingredients

  • 2 28 ounce cans whole peeled tomatoes
  • 4 cups chicken broth
  • Salt, to taste
  • 1/2 tablespoon ground pepper
  • 5 tablespoons butter
  • 1 teaspoon dried basil
  • 1 teaspoon minced garlic

Instructions

  1. Add tomatoes to large pot. Using an immersion blender, blend the tomatoes until smooth.

  2. Add chicken broth and bring to a slow boil.

  3. Add salt and pepper, to taste.

  4. Add butter, basil, and garlic. Stir until butter is melted.

  5. Reduce heat and simmer for 5 minutes.
