Toasted Bread Crumb Topped Chicken Alfredo

Winner, winner, chicken dinner! You’ll love this toasted bread crumb topped chicken alfredo. Just a few simple ingredients and 20 minutes are all it takes for this tasty meal to come together!

Ingredients

  • 8 ounces angel hair spaghetti
  • 1 tablespoon butter
  • 1/4 cup Panko plain breadcrumbs
  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 large boneless, skinless chicken breast, diced
  • Salt, to taste
  • Pepper, to taste
  • 1 campari tomato, diced
  • Alfredo sauce
  • Parsley, to garnish

Instructions

  1. Cook pasta according to package directions. Drain and set aside.

  2. While the pasta is cooking, in a small saucepan over low heat, melt the butter. Add bread crumbs and stir until toasted and golden brown, about 5 minutes. Remove from heat and set aside. Stir occasionally to prevent the toasted bread crumbs from sticking to the bottom of the saucepan.

  3. In a large skillet, heat the olive oil. Add garlic and stir fry until fragrant, about 1 minute.

  4. Add chicken. Season with salt and pepper to taste. Cook until chicken is opaque, about 7 minutes.

  5. Add tomato and alfredo sauce. Stir to combine and cook until sauce is heated and chicken is cooked through. Stir in pasta until well combined.

  6. Top with toasted bread crumbs and garnish with parsley. Serve.
