Savory Celery Soup

Ingredients
2 tablespoons olive oil, or butter
1 small onion, diced
4 cloves garlic, minced
6 cups celery, diced (save some leaves to garnish)
2 cups russet potatoes, diced
4 cups chicken broth or vegetable stock
1 cup water
1 teaspoon salt
1/2 teaspoon pepper
Instructions
In a large pot, add the olive oil or melt the butter. Add onion and cook until lightly browned, about 5 minutes.
Add garlic and cook until fragrant, about 1 minute.
Add celery, potatoes, broth, water, salt, and pepper.
Bring to a boil. Once boiling, reduce heat and let simmer until potatoes are soft, about 10 minutes.
Using an immersion blender, blend to desired consistency.
Garnish with celery leaves and serve.
