This savory celery soup is full of bold, fresh celery flavor. The best part? A big stalk of celery contains just about 10 calories! So go ahead and make a big batch of this comforting, low-calorie celery soup for a filling veggie lunch or dinner.

Ingredients

  • 2 tablespoons olive oil, or butter

  • 1 small onion, diced

  • 4 cloves garlic, minced

  • 6 cups celery, diced (save some leaves to garnish)

  • 2 cups russet potatoes, diced

  • 4 cups chicken broth or vegetable stock

  • 1 cup water

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, add the olive oil or melt the butter. Add onion and cook until lightly browned, about 5 minutes.

  2. Add garlic and cook until fragrant, about 1 minute.

  3. Add celery, potatoes, broth, water, salt, and pepper.

  4. Bring to a boil. Once boiling, reduce heat and let simmer until potatoes are soft, about 10 minutes.

  5. Using an immersion blender, blend to desired consistency.

  6. Garnish with celery leaves and serve.
