This cherry tomato salad is undeniably simple, but that doesn’t mean it won’t blow your taste buds away. Cherry tomatoes are available year round, making this the perfect salad to make at any time of the year. It’s fresh, healthy, and you can assemble it in minutes with a quick and easy dressing of olive oil, balsamic vinegar, honey, and flavorful herbs.

Ingredients

  • 1 pint cherry tomatoes

  • 3 ounces mozzarella cheese, cut into bite-size pieces

For the dressing

  • 1/3 cup extra virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 2 tablespoons red onion, finely diced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh or dried parsley

  • 1 tablespoon fresh or dried basil

  • Salt, to taste

  • Pepper, to taste

Instructions

  1. Slice cherry tomatoes in half.

  2. Arrange tomatoes and mozzarella in a single layer on a shallow dish.

  3. In a small jar, combine the dressing ingredients. Place the lid on the jar and shake vigorously to emulsify. Pour over tomatoes and mozzarella.

  4. Marinate for 2-3 hours. If you plan to marinate for longer, place the salad in the refrigerator and bring to room temperature prior to serving.
