Creamy Chicken and Noodles
This rich and creamy chicken and noodles dish is the perfect comfort food. Thick egg noodles and tender chunks of diced chicken are mixed in an easy sauce that is flavored with basic herbs and spices.

Ingredients
12 ounces egg noodles
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced into 1-inch chunks
Salt, to taste
Pepper, to taste
3 cloves garlic, minced
1/2 onion, diced
3 carrots, diced
2 stalks celery, diced
1/4 teaspoon dried thyme
1/2 cup grated Parmesan
2 tablespoons chopped parsley
For the sauce
3 tablespoons butter
3 cloves garlic, minced
1/2 cup all-purpose flour
2 cups chicken broth
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon onion powder
Salt, to taste
Pepper, to taste
Instructions
In a large saucepan, melt the butter. Add garlic and stir until fragrant. Slowly add the flour until lightly browned. Add chicken broth, parsley, thyme, and onion powder. Stir until sauce has thickened, about 5 minutes. Add salt and pepper to taste. Set aside.
Cook the noodles according to package directions. Drain and set aside.
In a large skillet, heat 1 tablespoon olive oil. Season chicken with salt and pepper, to taste, and add to skillet until golden. Set aside.
Add remaining tablespoon olive oil, garlic, onion, carrots, and celery. Stir occasionally until tender, about 3 minutes. Add thyme. Stir occasionally until fragrant, about 1 minute.
Stir in sauce, noodles, chicken, and Parmesan. Stir to combine until heated through, about 4 minutes.
Garnish with parsley and serve.
