Leige Waffles
If you’ve never had a Waffle Cabin waffle before, you’re in for a treat. These waffles have a crunchy sugar coating on the outside and are soft and buttery on the inside. They smell like vanilla and taste like heaven. We’ve made several attempts to recreate these drool-worthy waffles at home and we’re so happy to finally be able to say that this is as close as it gets to the real deal!

Ingredients
- 1 tablespoon active dry yeast
- 1 teaspoon sugar
- 3/4 cup whole milk, warmed
- 2 eggs, lightly beaten
- 4 cups flour
- 3 tablespoons brown sugar
- 1 and 1/2 teaspoon salt
- 1 cup butter, softened
- 2 tablespoons honey
- 1 tablespoon vanilla extract
- 1 and 1/2 cup Belgian pearl sugar
Instructions
In a small bowl, add the yeast, sugar and milk. Let sit for 5 minutes.
In a mixing bowl, combine the eggs with 1 and 1/2 cup flour until smooth. Sprinkle remaining 2 and 1/2 cup flour over the mixture to keep it moist. Cover and let rise for 90 minutes.
Add the brown sugar and salt. Blend on medium-low. While mixing, add the butter in increments of 2 tablespoons at a time. Add honey and vanilla.
Using a hook attachment, mix for 4 minutes, rest the dough for 1 minute, mix for 2 minutes, and rest the dough again for 1 minute. Repeat this until the dough balls up on the hook. Cover and let rise for 4 hours.
Knock the dough down and wrap 2-3 times with plastic wrap. Place in a bowl or pan, weighing it down a bit, and refrigerate overnight.
The next day, knead in all the pearl sugar a little at a time over a slightly floured surface. Once all the sugar is mixed, divide the dough into 16 balls of equal size. Let rise for 90 minutes.
Cook in a waffle iron for 4 minutes. Allow to cool before serving.
