Chris's Spicy Peanut Butter Pad Thai
This recipe is the result of my boyfriend taking one of my recipes and making it even better. Like the original recipe , this recipe is quick and easy and comes together in just under 30 minutes. This recipe uses Pad Thai noodles, eggs, and chicken as its primary ingredients, and is flavored with the original tangy Pad Thai sauce and creamy peanut buttery goodness. The noodles soak up the sauce so well in this recipe that you won't be able to not ask for seconds!

Ingredients
8 oz Pad Thai noodles
2 tablespoons sesame oil, divided
2 eggs, beaten
1 chicken breast, cut into 1-inch chunks
1 shallot, thinly sliced
1 cup bean sprouts
Scallions, optional
For the sauce
1/2 cup Thai peanut sauce (we used Sun Luck brand Thai peanut sauce)
1/2 cup chunky peanut butter
1/2 cup coconut milk
2 tablespoons fish sauce
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
1 lime, juiced
2 tablespoons sriracha
1 and 1/2 tablespoon red pepper flakes
Instructions
Cook the noodles according to package directions.
While the noodles are cooking, in a medium bowl, whisk together the sauce ingredients. Set aside.
When the noodles are done cooking, run them under cold water to prevent further cooking. Drain well. Toss with 1 tablespoon sesame oil. Set aside.
In a large pan, cook the eggs with 1/2 tablespoon sesame oil. Set aside.
In the same pan, cook the chicken with the remaining 1/2 tablespoon sesame oil. Set aside.
In the same pan, add the shallot. Stir fry until lightly browned, about 1-2 minutes.
Add the noodles, eggs, chicken, bean sprouts and sauce to the pan. Stir to combine.
Garnish with scallions, if using, and serve.
