Creamy Kickin’ Chicken Pasta

This creamy chicken pasta is the happy result of being hungry after returning from a week away from home, not having done any groceries, and having only what was available in the fridge and pantry. Using some chicken, pasta and cherry tomatoes, along with some other miscellaneous items, we ended up with this deliciously creamy chicken pasta that we’ll definitely be making again and again.

Ingredients

  • 8 ounces pasta
  • 4 tablespoons butter
  • 2 chicken breasts, cubed
  • 2 tablespoons chicken seasoning (I used Weber Kick’n Chicken Seasoning)
  • 1 cup heavy whipping cream
  • 1 pint cherry tomatoes, halved
  • 2 scallions, thinly sliced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/3 cup grated parmesan

Instructions

  1. Cook pasta according to package directions.

  2. In a large skillet, melt the butter. Add chicken and seasoning. Cook until chicken is opaque.

  3. Add whipping cream, tomatoes, scallions, basil, and garlic powder. Bring to a boil and let simmer until the sauce is reduced by one third.

  4. Stir in pasta until well coated. Stir in parmesan.

  5. Serve.
