Kickin' Pumpkin Pasta
I don’t know about you guys, but lately, I’ve been looking for ways to use up all the things that have been lying around in my fridge and pantry. Today’s experiment is this kickin’ pumpkin pasta. The sauce is made with garlic, onions, chicken broth, cream, and of course, pumpkin purée. For an extra kick, I added a bit of Weber Kick’n Chicken Seasoning. If you don’t have this specific seasoning lying around, don’t worry - any savory seasoning with a slight kick will do. (And this recipe would work just as well with some crushed red pepper flakes and a pinch of smoked paprika!)

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon Weber Kick’n Chicken Seasoning (or any meat seasoning)
- 15 ounces pumpkin purée
- 1 1/2 cups chicken broth
- Salt
- Pepper
- 8 ounces pasta
- 1/4 cup heavy cream
- 1/4 cup grated parmesan
Instructions
Heat the oil in a medium pan, over medium high heat. Sauté the onion and garlic until the onion is transparent, about 3-5 minutes.
Add the seasoning, pumpkin, chicken broth, salt, and pepper. Stir until evenly combined. Reduce heat and simmer for 15 minutes.
Cook pasta according to package directions.
Once the sauce has simmered for 15 minutes, reduce heat and add the heavy cream. Stir to combine.
Add the pasta. Stir to combine.
Stir in the parmesan.
