Kielbasa, Potato, and Arugula Salad

Ingredients
12 ounce kielbasa, sliced into 1/4 inch slices
4 large potatoes, diced into ½-inch cubes
1/4 onion, diced
½ teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
3 tablespoons olive oil
4 cups arugula
1 cucumber, sliced (optional)
2 scallions, sliced
Instructions
Preheat oven to 400° F.
Line a baking pan with aluminum foil.
In a large bowl, combine kielbasa, potatoes, onion, salt, garlic, paprika, olive oil. Spread out on baking pan in a single layer if possible.
Bake for 30-45 minutes, stirring around every 15 minutes, until potatoes are soft.
Serve over arugula and cucumbers, if using. Garnish with scallions.
