Kielbasa, Potato, and Arugula Salad

Ingredients

  • 12 ounce kielbasa, sliced into 1/4 inch slices

  • 4 large potatoes, diced into ½-inch cubes

  • 1/4 onion, diced

  • ½ teaspoon salt

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 3 tablespoons olive oil

  • 4 cups arugula

  • 1 cucumber, sliced (optional)

  • 2 scallions, sliced

Instructions

  1. Preheat oven to 400° F.

  2. Line a baking pan with aluminum foil.

  3. In a large bowl, combine kielbasa, potatoes, onion, salt, garlic, paprika, olive oil. Spread out on baking pan in a single layer if possible.

  4. Bake for 30-45 minutes, stirring around every 15 minutes, until potatoes are soft.

  5. Serve over arugula and cucumbers, if using. Garnish with scallions.
