Kimchi Bacon Udon
This kimchi bacon udon stir fry is so easy to make and so satisfying! I always want seconds. In this dish, kimchi shines as a component of the dish, rather than as a condiment. Ingredients
- 2 packs udon noodles
- 4 strips bacon, sliced into 1 inch pieces
- 1/2 small onion, sliced
- 2 scallions, thinly sliced
- 1 cup kimchi, cut into bit-sized pieces
- Toasted sesame seeds, optional
- Egg, optional
For the sauce
- 1/2 tablespoon red pepper flakes
- 1 teaspoon sriracha
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1/2 teaspoon minced garlic
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
Instructions
Cook udon according to package directions. Drain and set aside.
In a small bowl, combine the sauce ingredients.
In a large pan, cook the bacon until it is almost done. Drain excess fat.
Add onion and kimchi and fry until wilted, about 2 minutes.
Add the sauce and stir to combine.
Add the udon and stir until everything is evenly coated.
Add the scallions and stir gently.
Top with toasted sesame seeds and egg if using. Serve.
