Kimchi Quesadillas
These kimchi quesadillas are the perfect twist on your typical quesadilla with soft, gooey cheese complementing tangy kimchi.

Ingredients
- 1 tablespoon butter
- 1 cup kimchi, chopped and drained
- 1/2 teaspoon honey (I used Mike’s hot honey)
- 1 teaspoon soy sauce
- 2 10-inch tortillas
- 2 cups freshly grated mozzarella
- 2 tablespoons toasted sesame seeds
- Scallions, sliced
Instructions
In a small pan, heat the butter. Add kimchi and honey. Cook until juices have been reduced, about 5 minutes.
Stir in soy sauce. Cook for about 1 minute. Set aside.
Heat a large pan. Place a tortilla in the pan. Top with 1/2 cup mozzarella, half the kimchi, and another 1/2 cup mozzarella. Fold the tortilla in half and cook until golden and mozzarella is melted, flipping halfway.
Repeat with the other tortilla.
Top with scallions and sesame seeds. Enjoy!
