Kimchi Quesadillas

Kimchi Quesadillas

These kimchi quesadillas are the perfect twist on your typical quesadilla with soft, gooey cheese complementing tangy kimchi.

SERVES: 2
PREP TIME: 5 MINS COOK TIME: 10 MINS TOTAL TIME: 15 MINS

Ingredients

  • 1 tablespoon butter
  • 1 cup kimchi, chopped and drained
  • 1/2 teaspoon honey (I used Mike’s hot honey)
  • 1 teaspoon soy sauce
  • 2 10-inch tortillas
  • 2 cups freshly grated mozzarella
  • 2 tablespoons toasted sesame seeds
  • Scallions, sliced

Instructions

  1. In a small pan, heat the butter. Add kimchi and honey. Cook until juices have been reduced, about 5 minutes.

  2. Stir in soy sauce. Cook for about 1 minute. Set aside.

  3. Heat a large pan. Place a tortilla in the pan. Top with 1/2 cup mozzarella, half the kimchi, and another 1/2 cup mozzarella. Fold the tortilla in half and cook until golden and mozzarella is melted, flipping halfway.

  4. Repeat with the other tortilla.

  5. Top with scallions and sesame seeds. Enjoy!
