Leftover Roast Duck Noodle Soup

One of my favorite ways to repurpose leftover duck? Make roast duck noodle soup! Tip: if you reheat the duck in an air fryer, the skin will come out extra crispy and the meat super moist, just as if it’s freshly roasted!

SERVES: 1
PREP TIME: 5 minutes COOK TIME: 10 minutes TOTAL TIME: 15 minutes

Ingredients

  • 2 cups water
  • 1 serving egg noodles
  • 1/4 onion, sliced
  • 1 clove garlic, minced
  • 1/2 teaspoon chicken bouillon
  • A pinch five spice powder
  • 1/2 tablespoon fish sauce
  • 1 teaspoon sugar
  • Black pepper, to taste
  • Roast duck
  • Scallions
  • Fried shallots

Instructions

  1. Cook noodles according to package directions.

  2. Bring 2 cups of water to a boil. Add onion, garlic, bouillon, five spice powder, fish sauce, sugar, and pepper. Let simmer for about 5-10 minutes. Adjust seasoning as needed.

  3. Meanwhile, reheat the duck.

  4. Pour the broth over the noodles, top with roast duck, scallions, and fried shallots. Enjoy!
