Mojo Pork Breakfast Skillet

This mojo pork breakfast skillet is the perfect way to use up leftover mojo pork. The rich and tangy flavors of mojo pork infuse every bite, creating the perfect blend of breakfast comfort. Definitely a satisfying way to start the morning.

Ingredients

  • 1 teaspoon oil
  • 1 1/2 cups leftover pork
  • 2 eggs
  • Mushroom seasoning, to taste
  • Pepper, to taste
  • Handful cilantro
  • 1 wedge lime

Instructions

  1. In a small skillet, heat the oil over medium heat. Add the pork and stir fry until lightly crisp, about 4-5 minutes.

  2. Make two divots in the pork. Add an egg into each divot. Season with mushroom seasoning and pepper. Cook until the eggs reach your desired consistency.

  3. Garnish with cilantro and lime juice.

  4. Enjoy!
