Perfect Roast Chicken

This perfect roast chicken is flavored with butter, garlic, simple herbs and spices and then roasted to golden, crispy, juicy, fall-off-the-bone perfection.

SERVES: 4-6
PREP TIME: 10 minutes COOK TIME: 1 hour, 15 minutes TOTAL TIME: 1 hour, 35 minutes

Ingredients

  • 3-4 pound whole chicken
  • 1 lemon, sliced
  • 3 sprigs rosemary
  • 4 cloves garlic, minced
  • 3 tablespoons butter, melted
  • 3 gloves garlic, minced
  • 3/4 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground pepper

Instructions

  1. Preheat oven to 450° F.

  2. Remove giblets from chicken.

  3. Pat chicken dry using paper towels.

  4. Place chicken breast side up on a rack placed on a roasting pan. Add some salt to the inside of the cavity and stuff with lemon, rosemary, and 4 cloves minced garlic. Tie the legs together using kitchen twine and tuck the wings underneath the chicken.

  5. Brush chicken with melted butter. Rub remaining 3 cloves minced garlic all over chicken.

  6. In a small bowl, combine salt, basil, thyme, pepper. Rub all over chicken.

  7. Roast uncovered for 10 minutes.

  8. Reduce oven temperature to 350° F and continue roasting for 1 hour 10 minutes, or until internal temperature reaches 165° F.

  9. Remove from oven and baste with chicken juices.

  10. Let sit for 10-15 minutes before cutting.
