Perfect Roast Chicken
This perfect roast chicken is flavored with butter, garlic, simple herbs and spices and then roasted to golden, crispy, juicy, fall-off-the-bone perfection.

Ingredients
- 3-4 pound whole chicken
- 1 lemon, sliced
- 3 sprigs rosemary
- 4 cloves garlic, minced
- 3 tablespoons butter, melted
- 3 gloves garlic, minced
- 3/4 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground pepper
Instructions
Preheat oven to 450° F.
Remove giblets from chicken.
Pat chicken dry using paper towels.
Place chicken breast side up on a rack placed on a roasting pan. Add some salt to the inside of the cavity and stuff with lemon, rosemary, and 4 cloves minced garlic. Tie the legs together using kitchen twine and tuck the wings underneath the chicken.
Brush chicken with melted butter. Rub remaining 3 cloves minced garlic all over chicken.
In a small bowl, combine salt, basil, thyme, pepper. Rub all over chicken.
Roast uncovered for 10 minutes.
Reduce oven temperature to 350° F and continue roasting for 1 hour 10 minutes, or until internal temperature reaches 165° F.
Remove from oven and baste with chicken juices.
Let sit for 10-15 minutes before cutting.
