Strawberry Arugula Salad with Honey Balsamic Vinaigrette

This strawberry arugula salad is colorful and delicious! Classic fruit and cheese is complemented by peppery arugula and nutty almonds, and topped off with an easy honey homemade balsamic vinaigrette.

SERVES: 2
PREP TIME: 10 MINS COOK TIME: 0 MINS TOTAL TIME: 10 MINS

Ingredients

  • 3 cups arugula
  • handful of strawberries, quartered
  • handful of almonds
  • 3-4 tablespoons cottage cheese

For the dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsmic vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 tespoon pepper

Instructions

  1. In a salad bowl, add arugula, strawberries, and almonds.

  2. Spoon small amounts of cottage cheese throughout the salad.

  3. In a small jar, add the dressing ingredients. Close the lid tightly and shake to combine.

  4. Add dressing to salad and toss prior to serving.

Notes

  • Any leftover dressing can be stored at room temperature.
