Poached Chicken Noodle Soup (Mi Ga)

There’s nothing quite like a nice hot bowl of wholesome chicken noodle soup. This chicken noodle soup has toothsome noodles, tender poached chicken, nutritious bok choy, fresh chopped scallions, and an aromatic broth that you can’t stop slurping. The soy sauce-based broth contains ginger, which is particularly good for colds. Poaching in broth also happens to be a great way to cook chicken and as far as this recipe is concerned, is guaranteed to give you moist, tender, chicken every time.

Ingredients

  • 2 chicken breasts
  • 3 and 1/2 cups chicken broth
  • 1 and 1/2 cups water
  • 3 tablespoons soy sauce
  • 4 teaspoons sugar
  • 3 tablespoons cooking wine
  • 4 teaspoons ginger, minced
  • 4 cloves garlic, minced
  • 2 star anise
  • 12 ounces egg noodles
  • 3 bok choys
  • 2 scallions, sliced, to garnish
  • Cilantro, to garnish

Instructions

  1. In a medium stock pot, add the chicken breasts, broth, water, soy sauce, sugar, cooking wine, ginger, garlic, and star anise. Bring to a boil.

  2. Once boiling, remove from heat and set aside covered for 25 minutes. The chicken won’t overcook, so you can leave it longer if you need to.

  3. Cook noodles according to package directions. Drain and divide into bowls.

  4. Remove the chicken and shred. Add to noodle bowls.

  5. Bring the soup back to a boil.

  6. Once boiling, add the bok choy and cook until bright green, about 2 minutes.

  7. Top noodle bowls with bok choy. Add soup to the noodle bowls.

  8. Garnish with scallions and cilantro.

  9. Serve.
