Pork and Arugula Pasta with Creamy Lemon Sauce
This dish is so good, it's pre-pasta-rous! Juicy pork and fresh arugula are served with a heavenly homemade lemon sauce in this pasta dish. It's the perfect balance of flavors that we just can't get enough of.

Ingredients
8 ounces penne pasta
1 tablespoon vegetable oil
2 boneless pork chops, cut into bite size pieces
Salt and pepper, to taste
1 tablespoon butter
2 tablespoons lemon juice
2 cups arugula
1 stem basil, thinly sliced
For the sauce
1 and 1/4 cups heavy cream
1 and 2/3 cups vegetable stock
3 tablespoons lemon juice
3 and 1/2 ounce finely shredded fiesta blend cheese
Instructions
In a small pan, stir together the sauce ingredients. Bring to a boil. Then lower heat and let simmer for 20 minutes.
Cook pasta according to package directions. Drain and set aside.
In a large skillet, heat the oil and sear the pork until no longer opaque. Add salt and pepper to taste. Remove from heat and set aside.
In the same skillet, melt the butter and add lemon juice. Add pork, pasta, arugula, basil, and lemon sauce.
Serve immediately.
