Quick and Easy Lemon Parmesan Asparagus Pasta
This quick and easy lemon parmesan asparagus pasta is so simple and fresh that you’ll be making it over and over again! It's the perfect amount of delicious lemony goodness (just the way Chris and I like our lemon dishes!) and can be served as a light and healthy main dish or side dish.

Ingredients
8 ounces rotini pasta
1/2 pound asparagus, trimmed and cut into 1-inch sections
1 teaspoon olive oil
2 cloves garlic, minced
1 lemon, zested and juiced
1 tablespoon grated Parmesan
Salt and pepper, to taste
Instructions
Cook pasta according to package instructions. Drain and set aside.
While the pasta is cooking, in a medium pot, boil asparagus until bright green, about 2 minutes. Drain any excess water and place back on stove.
Add oil and garlic and fry for 1 minute.
Add pasta, lemon zest, lemon juice, and Parmesan. Toss to combine.
Add salt and pepper, to taste.
