Scrambled Egg, Prosciutto, and Arugula Breakfast Sandwich

This is not your ordinary bacon, egg, and cheese sandwich. I woke up this morning craving a breakfast sandwich and made this quick and delicious sandwich with toasted French bread, pesto, cheddar, scrambled eggs, prosciutto, and arugula.

PREP TIME: 5 MINS COOK TIME: 5 MINS TOTAL TIME: 10 MINS

Ingredients

  • 2 slices French bread, toasted

  • 1/2 to 1 teaspoon pesto, depending on preference

  • 1 slice cheddar cheese

  • 1 egg, scrambled

  • 1 slice prosciutto

  • 1/4 cup arugula

Instructions

  1. To assemble the sandwich, place a slice of toast on a small plate. Top with pesto, cheese, eggs, prosciutto, and arugula.
