Coconut Curry Chicken Noodle Soup

With fall (almost) here, it’s the perfect time for deliciously warm & cozy comfort food! One of my personal favorites is this tasty coconut curry chicken noodle soup. It’s simple to make, but oh so good. You can’t go wrong!

PREP TIME: 5 minutes COOK TIME: 10 minutes TOTAL TIME: 15 minutes

Ingredients

  • 8 ounces vermicelli noodles

  • 2 tablespoons vegetable oil

  • 3 garlic cloves, minced

  • 1 tablespoon fresh grated ginger

  • 1-3 tablespoons Thai red curry paste, depending on spice preference

  • 2 boneless chicken breasts, cubed

  • 4 cups chicken broth

  • 1 cup water

  • 2 tablespoons fish sauce

  • 2/3 cup coconut milk

  • 1 lime, juiced

  • Cilantro and scallions to garnish

Instructions

  1. Cook vermicelli according to package directions. Divide cooked vermicelli into four bowls.

  2. In a medium pot over medium heat, add the oil, garlic, ginger, and Thai red curry paste. Stir fry until fragrant, about 1 minute.

  3. Add the chicken. Stir fry until the chicken becomes opaque, about 3-5 minutes.

  4. Add the chicken broth, water, fish sauce and coconut milk. Bring to a boil.

  5. Divide soup over vermicelli. Garnish with lime juice and cilantro. Serve.
