Slow Cooker Soy Vinegar Chicken

Ingredients
1 medium yellow onion, thinly sliced
1/2 teaspoon garlic powder
1 (2 inch) piece of fresh ginger, sliced
1 bay leaf
1-2 pounds chicken thigh filets
3/8 cup soy sauce
1/8 cup rice vinegar
1/2 tablespoon sugar
1/4 teaspoon ground pepper
Instructions
Add the onion, garlic, ginger, and bay leaf to the slow cooker.
Place the chicken on top of the onion, garlic, ginger, and bay leaf.
In a small bowl, whisk together the soy sauce, rice vinegar, sugar and pepper. Pour the soy sauce mixture over the chicken.
Cover and cook on LOW for 5 hours without opening the lid during the cooking time.
Discard the ginger and bay leaf before serving.
