Slow Cooker Soy Vinegar Chicken

This slow cooker soy vinegar chicken is absolutely delicious. If you like soy sauce, you'll definitely love this recipe. The meat is tender and the sauce is flavorful. This is one of those recipes that gets better as it sits so you can even make it the day before.

Ingredients

  • 1 medium yellow onion, thinly sliced

  • 1/2 teaspoon garlic powder

  • 1 (2 inch) piece of fresh ginger, sliced

  • 1 bay leaf

  • 1-2 pounds chicken thigh filets

  • 3/8 cup soy sauce

  • 1/8 cup rice vinegar

  • 1/2 tablespoon sugar

  • 1/4 teaspoon ground pepper

Instructions

  1. Add the onion, garlic, ginger, and bay leaf to the slow cooker.

  2. Place the chicken on top of the onion, garlic, ginger, and bay leaf.

  3. In a small bowl, whisk together the soy sauce, rice vinegar, sugar and pepper. Pour the soy sauce mixture over the chicken.

  4. Cover and cook on LOW for 5 hours without opening the lid during the cooking time.

  5. Discard the ginger and bay leaf before serving.
