Smash Sausage Breakfast Tacos

These smash sausage breakfast tacos are a fun and flavorful twist on your morning routine. The sausage is pressed directly onto the tortilla and cooked meat-side down until crisp and golden. Top with scrambled eggs, cheddar, and parsley for a deliciously easy, satisfying breakfast that’s ready in minutes.

Ingredients

  • 1/2 pound breakfast sausage
  • 4 small tortillas
  • 4 eggs
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Divide the sausage into 4 equal portions. Take one portion and press it directly onto one side of a tortilla, spreading it out to cover most of the surface in an even layer.

  2. Heat a nonstick pan over medium heat. Place the tortilla meat-side down in the pan and press gently to help the sausage adhere. Cook for 4–5 minutes until the sausage is browned and cooked through. Flip and cook the tortilla side for about 1 minute to lightly toast. Repeat with remaining tacos. Set aside.

  3. In a bowl, whisk the eggs with salt and pepper. In a separate pan, scramble the eggs over medium-low heat.

  4. Top each sausage-tortilla with scrambled eggs, shredded cheddar, and chopped parsley.

  5. Enjoy!
