Spicy Salmon Sushi Muffins
These baked spicy salmon sushi muffins are a mouthwatering combination of rich salmon, refreshing cucumber, and a kick of spice, all over a base of seaweed and sushi rice. Whether enjoyed as a snack, appetizer, or sushi-themed meal, these savory treats are sure to be a hit!

Ingredients
- 1 packet nori snacks
- 3/4 cup sushi rice, cooked
- 1/2 pound salmon filet, cubed
- 1 tablespoon sesame oil
- 1/2 tablespoon soy sauce
- 1/2 tablespoon honey
- 1 scallion, sliced
- 1/8 cup kewpie mayo
- 1-2 teaspoons sriracha
- 1/2 teaspoon honey
- 1/8 English cucumber, diced
- Sesame seeds
Instructions
Preheat oven to 400°F.
In a small bowl, combine the salmon, sesame oil, soy sauce, honey, and scallion. Let marinate for at least 30 minutes, up to 4 hours.
Place about a tablespoon of rice on two squares of nori.
Press the square into a 6-muffin tin and push gently to center the rice in the muffin tin. Top with about 5-6 pieces of salmon.
Bake for 15-17 minutes.
While the muffins are baking, make the spicy mayo in a small bowl by combining the mayo, sriracha, and honey.
Once the muffins are done baking, allow to cool for 1-2 minutes. Top with diced cucumber, drizzle with spicy mayo, garnish with sesame seeds and enjoy!
