Orzo Cucumber Tomato Salad
This orzo cucumber tomato salad is the perfect spring and summer salad. It’s made with sweet cherry tomatoes, crisp cucumbers, and tender orzo dressed with a light and tangy homemade lemon honey vinaigrette.

Ingredients
- 4 cups water
- 1 teaspoon mushroom seasoning or salt
- 1 cup orzo, uncooked
- 1 pint cherry tomatoes, quartered
- 1 shallot, thinly sliced
- 1/2 English cucumber, cubed
- 1/4 cup basil, chopped
- 1/4 cup mint, chopped
For the dressing:
- 1/2 cup apple cider vinegar
- 1/2 cup olive oil
- 1 large lemon, juiced
- 1 tablespoon honey
- Pepper, to taste
Instructions
In a medium saucepan, bring the water to a boil. Add mushroom seasoning. Add orzo and cook according to package directions. Set aside to cool.
In a small bowl, add the dressing ingredients and whisk to combine.
Once the orzo has cooled, add the orzo and remaining ingredients into a large bowl. Dress with 3/4 of the dressing. Toss until well combined. Refrigerate for 3 hours or overnight. Serve with the remaining dressing.
Notes
The dressing is versatile - feel free to make more or less as needed. You can store it in the fridge for months.
