Orzo Cucumber Tomato Salad

This orzo cucumber tomato salad is the perfect spring and summer salad. It’s made with sweet cherry tomatoes, crisp cucumbers, and tender orzo dressed with a light and tangy homemade lemon honey vinaigrette.

PREP TIME: 10 MINS COOK TIME: 10 MINS TOTAL TIME: 20 MINS

Ingredients

  • 4 cups water
  • 1 teaspoon mushroom seasoning or salt
  • 1 cup orzo, uncooked
  • 1 pint cherry tomatoes, quartered
  • 1 shallot, thinly sliced
  • 1/2 English cucumber, cubed
  • 1/4 cup basil, chopped
  • 1/4 cup mint, chopped

For the dressing:

  • 1/2 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1 large lemon, juiced
  • 1 tablespoon honey
  • Pepper, to taste

Instructions

  1. In a medium saucepan, bring the water to a boil. Add mushroom seasoning. Add orzo and cook according to package directions. Set aside to cool.

  2. In a small bowl, add the dressing ingredients and whisk to combine.

  3. Once the orzo has cooled, add the orzo and remaining ingredients into a large bowl. Dress with 3/4 of the dressing. Toss until well combined. Refrigerate for 3 hours or overnight. Serve with the remaining dressing.

Notes

  • The dressing is versatile - feel free to make more or less as needed. You can store it in the fridge for months.
