Mediterranean Inspired Chicken
This Mediterranean inspired chicken is super easy and tasty. It’s one of those recipes where I tossed some spices together one night and have been tweaking the recipe ever since. My favorite part about this chicken is that it’s so versatile - use it in a salad, in a wrap, or in a bowl! I like turning it into a grain bowl with curried couscous, tomatoes, lettuce, tahini dressing, and a spritz of fresh lemon juice.

Ingredients
- 1 chicken breast
- 1 bay leaf
- 1 slice ginger
- 1 teaspoon oil
For the spice mix:
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- A pinch of cloves
- 1/4 teaspoon black pepper
- Salt, to taste
Instructions
In a small pot, add the chicken, bay leaf, ginger and enough water to cover everything by an inch. Bring to a boil.
Once boiling, reduce to a simmer and poach for about 20 minutes, or until fluid from the chicken runs clear.
While the chicken is cooking, mix the spice ingredients together in a small bowl. Set aside.
Shred the chicken.
In a medium bowl, combine the chicken and spice mix.
In a medium pan, heat the oil and fry the chicken until lightly crisp.
Serve with your favorite grain or vegetable. Enjoy!
