Udon and Steak Noodle Bowl

If there's one dish that Chris and I love to make together, it's this Udon and Steak Noodle Bowl. The inspiration for this dish came when Chris described a dish that he had when he was younger. Based on what he could remember about the ingredients and flavors, we set out to re-create the dish. This meal hits all the bold flavors you could crave in a weeknight meal and has since become a part of our meal rotation. A bed of udon noodles drizzled in sweet and tangy sauce cradles fresh arugula and crisp bean sprouts, while tender, perfectly seasoned, juicy steak tops it off.

Ingredients

  • 21 ounces udon noodles

  • 1 lb steak

  • 1/2 teaspoon salt

  • 1 teaspoon ground pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon rosemary

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon soy sauce

  • 1/2 tablespoon olive oil

  • 2 tablespoons butter

  • 1 teaspoon sesame seeds, toasted

  • 1 cup bean sprouts

  • 1 cup arugula

For the sauce

  • 1/4 cup olive oil

  • 1/6 cup soy sauce

  • 1/8 cup oyster sauce

  • 1/8 cup rice wine vinegar

  • 1/8 brown sugar

  • 1 and 1/2 tablespoons freshly chopped ginger

  • 1 tablespoon sesame oil

  • 1 clove garlic, minced

Instructions

  1. Cook the noodles according to the package instructions. Set aside.

  2. While the noodles are cooking, in a small bowl, combine the sauce ingredients. Set aside.

  3. Rub half the salt, pepper, garlic powder, rosemary, Worcestershire sauce, and soy sauce evenly into one side of the steak. Repeat on the other side.

  4. In a medium pan, heat the olive oil on high heat until it starts to smoke.

  5. Add the steak. Flip every 15 seconds for 4 flips.

  6. Flip every 30 seconds for 2 flips.

  7. Lower heat to medium-low.

  8. Add 2 tablespoons of butter directly onto the pan surface.

  9. Angle the pan to approximately 30 degrees so that the butter pools. Using a spoon, drizzle the butter over the steak, making sure to get the steak on the higher end of the pan so that butter flows underneath it until edges start to brown, about 4 minutes.

  10. Remove the steak from heat and let sit for 2 minutes.

  11. To plate, divide the noodles into four bowls. Drizzle 2 tablespoons sauce over each bowl. Divide and sprinkle the sesame seeds onto each bowl. Divide and add bean sprouts and arugula to each bowl. Thinly slice, divide, and add steak to each bowl. Drizzle 1 tablespoon sauce over the steak.
