Ham, Cheese, and Arugula Omelette

There's nothing that quite hits the spot in the mornings like an omelette. This ham, cheese, and arugula omelette is full of protein from the eggs and ham and is so quick and easy, so you don’t have to wait a long time for your breakfast! Since omelettes are so versatile, you could use any veggie you'd like and even swap out the meat with tofu.

Ingredients

  • 3 large eggs

  • 1 tablespoon milk

  • PAM cooking spray

  • Salt and pepper, to taste

  • 1/4 cup finely chopped ham

  • 1/4 cup shredded mozzarella cheese

  • 1/4 cup baby arugula

Instructions

  1. In a small bowl, whisk the eggs and milk until blended.

  2. Coat the surface of a cooking pan with the cooking spray.

  3. Add the eggs. Gently push the cooked portions of the eggs from edges toward the center so that the uncooked eggs can reach the hot pan surface until the top surface of the eggs is thickened and no visible uncooked egg remains.

  4. Season with salt and pepper. Top with ham, cheese, and arugula. Fold in half.

  5. Serve immediately.
