Chili Mac and Cheese

This isn't your ordinary mac and cheese. It's still the unapologetically cheesy, carby deliciousness that you know and love, but combined with the hearty spiciness of chili. If you like chili, and you like mac and cheese, you'll go crazy for this chili mac and cheese.

PREP TIME: 10 minutes COOK TIME: 20 minutes TOTAL TIME: 30 minutes

Ingredients

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1/2 medium onion, diced

  • 8 ounces lean ground beef

  • 1 (14.5-ounce) can diced tomatoes

  • 1 (16-ounce) can chili beans, drained

  • 4 cups chicken broth

  • 2 teaspoons chili powder

  • 1 and 1/2 teaspoon cumin

  • Salt and pepper, to taste

  • 10 ounces elbows pasta

  • 1/2 cup shredded cheddar cheese

  • Cilantro, to garnish

Instructions

  1. In a large skillet, heat the olive oil. Add the garlic, onion, and ground beef. Cook until browned, about 3-5 minutes. Drain any excess fat.

  2. Add the tomatoes, beans, chicken broth, chili powder, and cumin. Taste and season with salt and pepper, if necessary.

  3. Bring to a boil and add the pasta. Lower heat and simmer until pasta is cooked through.

  4. Remove from heat. Top with cheese and cover the pot for about a minute, until the cheese melts.

  5. Serve immediately. Garnish with cilantro, if desired.
