Vietnamese Vegetarian Dipping Sauce (Nuoc Mam Chay)

If you like seasoning your Asian dishes with the typical Vietnamese condiment called nuoc mam, but find it too strong for your taste or simply if you're a vegetarian, this dipping sauce is for you.

PREP TIME: 10 MINS COOK TIME: 0 MINS TOTAL TIME: 10 MINS

Ingredients

  • 5 garlic cloves, mashed or minced

  • 2 teaspoons chili paste OR 1-2 whole red chilies

  • 1/2 cup soy sauce

  • 1 1/4 cup warm water

  • 1/2 cup sugar

  • 2 limes, juiced

Instructions

  1. Mash together garlic, chili, and sugar. The sugar helps absorb the oils from the chili and garlic so you don't leave any behind.

  2. Transfer the sugar paste into a medium jar and add the water. Stir until sugar is dissolved.

  3. Add the soy sauce and lime juice. Stir until well combined.

  4. Adjust if you like it saltier (more soy sauce), or spicier (more chili paste).

  5. Store in the fridge and enjoy with a variety of Vietnamese dishes
