Baked Egg Cups

Looking for a fun breakfast idea? Look no further — here is a beautiful, easy idea for simple handheld eggy entrees. All you need is a muffin pan and a little less than half an hour to make it happen.

SERVES: 2
PREP TIME: 5 minutes COOK TIME: 20 minutes TOTAL TIME: 25 minutes

Ingredients

  • 4 thin slices of ham

  • 4 eggs

  • Black pepper, to taste

Instructions

  1. Preheat the oven to 350° F (180°C).

  2. Spray bottoms and sides of muffin tin with cooking spray.

  3. Line inside of each muffin cup with ham.

  4. Carefully crack an egg over each cup. Sprinkle pepper over top.

  5. Bake in preheated 350°F (180°C) oven until whites are set and yolks are cooked as desired, 18 to 20 minutes.

  6. Run knife around inside of each muffin cup, then remove.

Notes

  • Add 2-3 leaves of spinach after lining the muffin cup with ham and before cracking the egg, if desired.

  • Sprinkle with thinly sliced green onion, chives, or your choice of fresh herbs for an added pop of color.
