Peanut Butter Chicken Noodles

Peanut butter chicken noodles is one of my favorite noodle dishes. It’s quick, tasty, and full of peanut buttery goodness; perfect for those busy weekday nights! Toss in some chicken, noodles, cabbage, carrots, and you’re good to go.

PREP TIME: 15 minutes COOK TIME: 10 minutes TOTAL TIME: 25 minutes

Ingredients

  • 2 (4.2-ounce) packages dried Shin Ramyun noodles, seasoning packets discarded

  • 1 tablespoon olive oil

  • 2 boneless, skinless chicken breasts, cut into 1-inch chunks

  • 2 cups shredded cabbage

  • 2 carrots, julienned

  • 2 scallions, thinly sliced

  • 1/4 cup fresh cilantro, optional

For the sauce

  • 1/4 cup peanut butter

  • 1/4 cup reduced sodium soy sauce

  • 3 cloves garlic, minced

  • 2 tablespoon honey

  • 1 tablespoon freshly grated ginger

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon Sriracha, optional

Instructions

  1. To make the sauce, whisk together the peanut butter, soy sauce, garlic, honey, ginger, rice vinegar, sesame oil, and Sriracha, if using. Set aside.

  2. In a medium pot of boiling water, add the noodles until loosened, about 1-2 minutes. Drain well.

  3. Heat the olive oil in a large skillet over medium heat. Add chicken to skillet and cook until golden brown., about 3-4 minutes.

  4. Stir in cabbage, carrots, and scallions until heated through, about 1 minute.

  5. Stir in noodles and peanut sauce until well combined, about 2 minutes.

  6. Serve immediately. Garnish with cilantro, if using.

Notes

  • Sprinkle with chopped peanuts and/or red pepper flakes, if desired.

  • For a gluten-free alternative, substitute Shin Ramyun noodles for Vietnamese vermicelli noodles.
