Peanut Butter Chicken Noodles

Peanut butter chicken noodles is one of my favorite noodle dishes. It’s quick, tasty, and full of peanut buttery goodness; perfect for those busy weekday nights! Toss in some chicken, noodles, cabbage, carrots, and you’re good to go.
PREP TIME: 15 minutes COOK TIME: 10 minutes TOTAL TIME: 25 minutes
Ingredients
2 (4.2-ounce) packages dried Shin Ramyun noodles, seasoning packets discarded
1 tablespoon olive oil
2 boneless, skinless chicken breasts, cut into 1-inch chunks
2 cups shredded cabbage
2 carrots, julienned
2 scallions, thinly sliced
1/4 cup fresh cilantro, optional
For the sauce
1/4 cup peanut butter
1/4 cup reduced sodium soy sauce
3 cloves garlic, minced
2 tablespoon honey
1 tablespoon freshly grated ginger
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon Sriracha, optional
Instructions
To make the sauce, whisk together the peanut butter, soy sauce, garlic, honey, ginger, rice vinegar, sesame oil, and Sriracha, if using. Set aside.
In a medium pot of boiling water, add the noodles until loosened, about 1-2 minutes. Drain well.
Heat the olive oil in a large skillet over medium heat. Add chicken to skillet and cook until golden brown., about 3-4 minutes.
Stir in cabbage, carrots, and scallions until heated through, about 1 minute.
Stir in noodles and peanut sauce until well combined, about 2 minutes.
Serve immediately. Garnish with cilantro, if using.
Notes
Sprinkle with chopped peanuts and/or red pepper flakes, if desired.
For a gluten-free alternative, substitute Shin Ramyun noodles for Vietnamese vermicelli noodles.
