Broccoli Minestrone
Broccoli, leeks, bacon, rosemary, pasta, beans and pesto come together for an unexpected burst of flavor in this cozy minestrone.

Ingredients
- 4 slices bacon, sliced
- 1 tablespoon oil
- 1 1/2 teaspoons dried rosemary
- 2 leeks, washed, halved, and sliced into 1/2 inch slices
- 1 head of broccoli, cut into bite-sized florets
- 6 ounces dried pasta
- 1 15-ounce can of mixed beans
- 6 cups chicken broth
- 1/2 teaspoon black pepper
- 1 1/2 tablespoons pesto
Instructions
In a large pot over medium heat, cook the bacon until halfway done.
Add the oil and rosemary. Stir until fragrant, about 1 minute.
Add in the leeks and stir for about 1 minute.
Add in broccoli, pasta, beans with juice, broth, and pepper.
Bring to a boil and let simmer until pasta is cooked through.
Divide into bowls and top each with a bit of pesto.
