Broccoli Minestrone

Broccoli Minestrone

Broccoli, leeks, bacon, rosemary, pasta, beans and pesto come together for an unexpected burst of flavor in this cozy minestrone.

SERVES: 4-6
PREP TIME: 10 MINS COOK TIME: 20 MINS TOTAL TIME: 30 MINS

Ingredients

  • 4 slices bacon, sliced
  • 1 tablespoon oil
  • 1 1/2 teaspoons dried rosemary
  • 2 leeks, washed, halved, and sliced into 1/2 inch slices
  • 1 head of broccoli, cut into bite-sized florets
  • 6 ounces dried pasta
  • 1 15-ounce can of mixed beans
  • 6 cups chicken broth
  • 1/2 teaspoon black pepper
  • 1 1/2 tablespoons pesto

Instructions

  1. In a large pot over medium heat, cook the bacon until halfway done.

  2. Add the oil and rosemary. Stir until fragrant, about 1 minute.

  3. Add in the leeks and stir for about 1 minute.

  4. Add in broccoli, pasta, beans with juice, broth, and pepper.

  5. Bring to a boil and let simmer until pasta is cooked through.

  6. Divide into bowls and top each with a bit of pesto.

  7. Enjoy!
