BBQ Chicken Miso Mac and Cheese

Miso mac and cheese topped with BBQ chicken, bacon, scallions, and ranch.

PREP TIME: 10 MINS COOK TIME: 20 MINS TOTAL TIME: 30 MINS

Ingredients

  • 8 ounces pasta
  • 1 1/2 cup heavy cream
  • 1 1/2 cup water
  • 2 tablespoons white miso
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons unsalted butter
  • 1/2 cup all-purpose flour
  • 8 ounces cheese, grated (I used a combination of cheddar, pepper jack, and bellavitano)
  • 8 chicken nuggets
  • BBQ sauce
  • 1 slice bacon
  • Scallions, to garnish
  • Ranch dressing
  • Red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup pasta water.

  2. Cook bacon and chicken nuggets until done. Toss chicken nuggets in BBQ sauce until evenly coated. Cut the bacon into small pieces.

  3. In a small saucepan, whisk together the heavy cream, water, miso, garlic, salt, pepper, and pepper flakes. Bring to a simmer.

  4. In a large pot, melt the butter. Slowly whisk in the flour until evenly combined and foaming, about 4 minutes.

  5. Continue whisking while slowly adding the milk mixture. Whisk until smooth.

  6. Add cheese and 1/2 cup pasta water. Whisk until cheese is melted and sauce is smooth.

  7. Add pasta and stir to combine. Add pasta water as needed to loosen the sauce until pasta is evenly coated.

  8. Top with chicken nuggets, bacon, scallions, red pepper flakes, and drizzle with ranch.

  9. Enjoy!
