Bulgur Salad with Grapes, Feta, and Arugula
This is one of my favorite salads, inspired by my fiancé’s mom. I’m a huge fan of bulgur wheat - I love that it’s so versatile, you can add almost anything to it and you won’t go wrong. The flavor bomb of sweet, tangy, and citrusy in this salad is perfect for spring or summer.

Ingredients
- 3/4 cup bulgur
- 1 cup boiling water
- Zest of 1 lime
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt, optional to taste
- 1/2 teaspoon pepper
- 1 cup crumbled feta
- 1 cup seedless red grapes, halved
- 2 scallions, thinly sliced
- 1 cup arugula
Instructions
In a medium bowl, add the bulgur and water. Cover and set aside until the water is absorbed, about 30 minutes.
Stir in the lime zest, lime juice, oil, salt, pepper, feta, grapes, scallions, and arugula. Gently toss until combined. Enjoy!
